Football Food: Garlic Parmesan Pizza Wings & Buffalo Chicken Lollipops

Let’s face it, after you have had enough of those Holiday Turkey leftovers, you need to try something new, so grab a beverage, kick your feet up, and watch some great football while your smoker cooks up some delicious, appetizers for you. Garlic Parmesan Pizza Wings

Ingredients:

·       1lb. Chicken wings

·       Garlic Parm Wing Dust (if you haven’t tried this yet – now is the time!)

·       1 jar Pizza sauce (your favourite or homemade)

·       Shredded Mozzarella

·       Sliced Pepperoni

·       Baking dish/cast iron pan 

Directions:

1.    Preheat your Yoder or Traeger Smoker to 325F

2.    Season wings with Garlic Parm Wing Dust

3.    Cook until internal temp is anywhere from 190° to 200°

4.    Remove wings from grill

5.    Place a few spoonsful of pizza sauce in the bottom of your baking dish

6.    Place wings in a dish on top of sauce

7.    Top wings with more sauce, sprinkle shredded cheese all over, and then top with pepperoni

8.    Place back into the smoker until cheese is melted and pepperoni crisps up

 

Buffalo Chicken Lollipops

Ingredients:

·       2 Packs of drumsticks (preferably with no water solution added)

·       Spray Duck Fat

·       1-1 ½ cups of your favorite BBQ sauce at room temperature (not right out of the refrigerator or cooler)

·       Pain Is Good Buffalo Blue Cheese Wing Sauce Sweet Kentucky Bourbon Grilling Glaze

·       About 1-1/4 cups of your favorite BBQ rub for chicken

·       Killer Bunny BBQ Bunny Butt Rub

·       A small amount of aluminum foil for the tops of the chicken bones

·       Kitchen shears and boning knife for trimming

Directions:

1.    Prepare the chicken lollipops by cutting around the drum legs, about 2” below the knuckle. Remove all of the meat/skin and the excess tendons.

2.    Now press down on the meat to form it into a lollipop shape.

3.    Wrap the exposed bone with tin foil to keep it looking clean during cooking. Repeat this process for all of the drum legs.

4.    Spray the chicken lollipops with duck fat as a great binder and season them generously with Killer Bunny BBQ Bunny Butt Rub. Set them aside until ready to cook.

5.    Fire up the smoker to 325F degrees.

6.    Place the chicken lollipops on the smoker in a standing position. Once the chicken reaches 165F internally, it is time to dip them in the BBQ sauce.

7.    Add some honey into the sauce to help stick to the chicken, then put the chicken back on the grill to tack up the sauce.
